Roma Tomato Bisque

Here's a lighter version of your favorite creamy tomato bisque. You'll never know the difference, 'cause our Roma Tomato Bisque is still so tasty!

What You'll Need

  • 2 (28-ounce) cans no-salt-added crushed tomatoes
  • 1 tablespoon sugar
  • 1 tablespoon chopped fresh basil or 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 (12-ounce) can low-fat evaporated milk

What to Do

  1. In a soup pot, combine tomatoes, sugar, basil, garlic powder, onion powder, and pepper; bring to a boil over medium-high heat, stirring occasionally.
     
  2. Reduce heat to low and slowly stir in evaporated milk. Simmer 4 to 5 minutes, or until heated through; do not allow to boil.

Garnishing Tip

A leaf or sprig of fresh basil on a dollop of fat-free sour cream looks great topping each serving!
