Creamy Spinach Soup

This yummy soup may give your gang a super burst of energy. That's cause spinach is a great source of vitamins, and our Creamy Spinach Soup is loaded with this healthy green veggie!
What You'll Need
- 1 teaspoon minced garlic
- 1/2 cup scallions, thinly sliced
- 3 1/2 cup ready-to use vegetable broth
- 2 (10-ounce) packages frozen spinach, thawed and well drained
- 3 tablespoon cornstarch
- 3 cup low-fat milk
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1/2 teaspoon black pepper
What to Do
- Coat a large saucepan with nonstick vegetable spray. Add the garlic and scallions and sauté over medium heat for 3 to 4 minutes or until tender. Stir in the broth and spinach. Cover and reduce the heat to low; simmer for 20 minutes.
- In a measuring cup, combine the cornstarch and milk and stir until smooth and the cornstarch is dissolved. Pour into the soup and stir until well combined. Add the remaining ingredients and stir constantly for 6 to 8 minutes or until the soup has thickened. Serve immediately.
Notes
Sometimes I add a little more garlic to really give this a nice garlic kick.
