What You'll Need
- 1/4 cup chopped onion
- 1/2 cup chopped celery
- 1 (10-3/4-ounce) can Healthy Request Cream of Celery Soup
- 1 (12-ounce) can evaporated nonfat milk
- 2 cup diced unpeeled baked potatoes
- 2 tablespoon bacon bits
- 3/4 cup shredded reduced fat Cheddar cheese
- 1/4 teaspoon black pepper
What to Do
- Coat a large saucepan with cooking spray. Over medium-high heat, saute onion and celery 5 minutes, or until tender.
- Add celery soup. evaporated skim milk, potatoes, and bacon bits; mix well to combine. Lower heat and simmer 10 minutes, stirring occasionally. Stir in Cheddar cheese and black pepper and continue to simmer 5 minutes, or until cheese is melted, stirring often.
