Caramel Corn Crunch

Our Caramel Corn Crunch is the perfect sweet and crunchy snack, plus, popcorn is a whole grain, which is a healthy bonus!

What You'll Need

  • 1 (3-ounce) package reduced-fat microwave popcorn
  • 1/2 cup packed brown sugar
  • 1/4 cup reduced-calorie margarine
  • 1/3 cup reduced-calorie maple-flavored syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

What to Do

  1. Preheat oven to 250 degrees F. Coat 2 rimmed baking sheets with cooking spray. Cook popcorn according to package directions. Place popped popcorn in a large bowl; set aside.
  2. In a saucepan over medium heat, combine sugar, margarine, and syrup. Bring to a boil, stirring constantly. Cook 5 minutes without stirring, or until candy thermometer registers 250 degrees. Remove from heat, and stir in vanilla and baking soda.
  3. Pour syrup mixture over popcorn; stir until evenly coated. Spread onto baking sheets.
  4. Bake 20 minutes. Cool on baking sheets, then break into small pieces. Store in an airtight container.
