Our Three Bean Chili is the perfect answer for those who are looking for a meatless meal every now and then. With plenty of beans and lots of good-for-you veggies, this chili is as hearty and healthy as they come!
What You'll Need
- 1 (15-ounce) can red kidney beans, rinsed and drained
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can garbanzo beans, rinsed and drained
- 2 large onions, chopped
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 2 (14-1/2-ounce) cans no-salt-added diced tomatoes, undrained
- 1 (14-1/2-ounce) can reduced-sodium vegetable broth
- 2 tablespoon minced garlic
- 3 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/4 cup cilantro leaves, roughly chopped
What to Do
- In a 4- to 5-quart slow cooker, combine all ingredients except cilantro. Cover and cook on HIGH for 3 to 4 hours (or LOW for 7 to 8 hours). Stir in cilantro and serve.
