- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 2 clove garlic, minced
- 1 cup Arborio rice
- 2 cup cubed butternut squash
- 2 1/2 cup reduced-sodium vegetable broth
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
What to Do
- In a large skillet over medium heat, heat oil and cook onion and garlic 3 to 5 minutes, or until translucent. Add rice and heat for 3 minutes, stirring occasionally.
