Slow Cooker Beefy-Veggie Soup

Long cooked soups don't have to have us tied to the kitchen. The convenience of using a slow cooker allows us to enjoy a delicious healthy soup like our Slow Cooker Beefy-Veggie Soup, and still go about our daily routine. This healthy version of a ground beef soup is so satisfying!
What You'll Need
- 1 pound 90% lean ground beef
- 1/2 cup chopped onion
- 2 clove garlic, minced
- 1 (16-ounce) package frozen soup vegetables
- 2 (14-1/2-ounce) cans Italian diced tomatoes
- 1 1/2 cup water
- 1 cup fat-free, low-sodium beef broth
- 1 teaspoon Italian seasoning
What to Do
- Coat a medium nonstick skillet with cooking spray. Over medium heat, cook beef, onion, and garlic 4 to 6 minutes or until browned, stirring occasionally; drain off liquid.
- In a 4- to 5-quart slow cooker, combine vegetables, the beef mixture, tomatoes, water, broth, and Italian seasoning. Cover and cook on LOW 4 to 6 hours or HIGH 3 hours.
