Cinnamon-Apple Pork Loin

What You'll Need

  • 2 pound pork loin
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 tablespoon canola oil
  • 1 large sweet potato, peeled and diced
  • 1 apple, peeled and diced
  • 1 onion, diced
  • 2 teaspoon ground cinnamon
  • 1 tablespoon honey
  • 1/2 cup unsweetened apple juice

What to Do

  1. Sprinkle pork loin with 1/4 teaspoon salt and 1/4 teaspoon black pepper. In a large skillet over medium-high heat, heat oil. Sear pork 2 to 3 minutes per side until browned. 
  2. Place sweet potato, apple, and onion in bottom of slow cooker. Sprinkle with cinnamon, remaining 1/4 tsp salt, 1/4 tsp black pepper, and the honey; mix well.
  3. Place pork on top of vegetables. Pour apple juice over pork and vegetables. Cover and cook on LOW 4 to 5 hours or HIGH 2 to 2-1/2 hours or until meat registers 165 degrees F. Serve with vegetables and sauce.
