Island Shrimp Skewers

Few things are tastier, and easier, in the summer than kabobs. But quite often, good-for-you seafood items are forgotten and left off the menu! Replace heavier meat kabobs with these Island Shrimp Skewers. The peach salsa takes them over the top!
What You'll Need
- 8 skewers
- 1 pound medium-sized shrimp (40-count), peeled and deveined with tails left on
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground ginger
- 2 cup canned no-sugar-added peaches, drained
- 1/2 a small green bell pepper, finely chopped
- 1/4 cup scallions, chopped
What to Do

If using wooden skewers, soak in water for 20 minutes. Coat a broiler pan or rimmed baking sheet with nonstick cooking spray.

Preheat the broiler. Place 5 shrimp onto each skewer and place on the broiler pan.

In a small bowl, combine the lime juice, honey, red pepper, black pepper, and ginger; mix well. Remove 2 tablespoons of the mixture to a medium bowl and set aside. Brush both sides of the skewered shrimp with the remaining mixture and broil for 4 to 5 minutes, or until pink.

Meanwhile, add the remaining ingredients to the reserved mixture; mix well to make a peach salsa. Spread the salsa over 4 serving plates and top each with 2 shrimp skewers. Serve immediately.
