What You'll Need
- 1/3 cup Splenda sugar blend
- 1/4 cup unsweetened cocoa
- 2 tablespoon cornstarch
- 1/8 teaspoon salt
- 2 1/4 cup reduced-fat milk
- 1 teaspoon vanilla extract
What to Do
- In a medium saucepan, combine Splenda sugar blend, cocoa, cornstarch, and salt. Gradually stir in the milk. Cook over medium heat until mixture boils, stirring constantly.
- Remove from heat and stir in vanilla.
- Spoon into 6 individual serving dishes or 1 large bowl, and refrigerate 2 to 3 hours, or until firm.
Notes
For a down-home taste, try eating this pudding warm and topped with a little ice-cold milk. But for a really elegant look, it's easy to top it with a little sugar-free whipped topping.
