Rice Pilaf

The match-up of the full flavors of onion and garlic add lots of great taste to our good-for-you recipe for Rice Pilaf. Everyone should love this go-along dish, whether or not they have diabetes.

What You'll Need

  • 1 cup brown rice
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 1/4 cup reduced-sodium, fat-free chicken broth

What to Do

  1. In a medium saucepan over medium heat, cook rice, onion, and garlic until rice is brown and onion is tender, stirring frequently.

  2. Stir in broth and bring to a boil. Reduce heat to low and simmer, covered, about 1 hour. Remove from heat and let stand, covered, about 5 minutes. Fluff with fork.
