Take the ho-hum out of healthy brown rice, by taking your taste buds on a tasty journey. A hint of curry powder and sweetness of chewy golden raisins, make this Brown Rice Supreme a memorable diabetic side dish.

What You'll Need

  • 1 cup finely chopped onion
  • 1/2 teaspoon curry powder
  • 2 cup cooked brown rice
  • 1/3 cup golden raisins

What to Do

  1. Coat a medium nonstick skillet with cooking spray. Over medium heat, cook onions until tender.
  2. Add curry powder and cook about 30 seconds. Stir in brown rice and raisins, cooking until heated through.
