Cranberry-Orange Pork Roast

There are plenty of times family is over during the holiday season, and not just Thanksgiving or Christmas. It might just be a Saturday night get-together, and you need something that's going to steal the show, and taste even better. Well, our Cranberry-Orange Pork Roast is the perfect center-piece for any dinner occasion! The tangy and citrusy flavors will wow the crowd, and allow you to stick to your diabetes-diet.
What You'll Need
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 (2-pound) boneless pork loin roast
- 1 1/2 cup fresh cranberries
- 3/4 cup water
- 3 tablespoon stevia
- 1/4 cup sugar free orange marmalade
- 1 tablespoon chopped fresh parsley
What to Do
- Preheat oven to 350 degrees F. Coat a roasting pan with cooking spray. In a small bowl, combine onion powder, garlic powder, and black pepper; sprinkle evenly on the pork loin. Place in a roasting pan; set aside.
- In a medium saucepan, over medium heat, cook cranberries, water, and stevia until cranberries burst and mixture begins to thicken. Remove from heat, and add marmalade and parsley; mix well. Spoon half the cranberry mixture over the roast.
- Bake 45 minutes and spoon remaining sauce over pork. Bake 15 more minutes or until thermometer reaches 145 degrees F in center of roast. Remove from pan and place on a cutting board to rest 5 minutes before slicing.
