What You'll Need
- 1 tablespoon Hungarian or Spanish paprika
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 pound pork sirloin roast, trimmed and cut into 1/2-inch chunks
- 1 tablespoon canola oil
- 1 cup chopped onions
- 1 carrot, peeled and thinly sliced
- 1 stalk celery, sliced
- 1 (14-1/2-ounce) can no-salt-added diced tomatoes
- 1/2 cup water
- 2 tablespoon reduced-fat sour cream
What to Do
- In a medium bowl, combine paprika, garlic, salt, and pepper. Add pork and toss until evenly coated.
- In a soup pot over high heat, heat oil. Add pork and onions; cook 5 to 7 minutes, or until meat is browned. Add carrot, celery, tomatoes, and water.
- Cover, reduce heat to low, and simmer 1-1/4 to 1-1/2 hours, or until pork is tender. Serve with a dollop of sour cream.
