What You'll Need
- 2 cup frozen seasoning blend (celery, onion, peppers, parsley)
- 5 slice 98% fat-free deli ham, diced
- 2 cup cooked brown rice
- 1/2 cup liquid egg substitute
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 small scallion, sliced
What to Do
- In a nonstick skillet over medium heat, combine 2 tablespoons water and frozen seasoning blend. Cook for 3 to 4 minutes or until vegetables are tender and liquid evaporates, stirring occasionally.
- Spray vegetables and skillet with cooking spray. Add ham and cook 1 to 2 minutes. Stir in rice and mix well. Pour in egg substitute and continue to cook until it sets, stirring occasionally.
- Sprinkle with scallions and serve.
