Apple pie is a classic dessert, but not always the best choice for someone with diabetes. Our Mini Apple Pie Tarts put a unique spin on a dish that is always counted among the most traditional Christmas dessert recipes, so you can you enjoy this favorite treat, too!
What You'll Need
- 1 cup finely chopped apples, peeled
- 1 tablespoon chopped dried cranberries
- 1/4 cup lemon curd
- 1 package frozen miniature phyllo tart shells
- 1/4 cup all-purpose flour
- 1 tablespoon sugar
- 1/4 teaspoon cinnamon
- 2 tablespoon cold butter
What to Do
- Preheat oven to 350 degrees F.
- In a small bowl, combine apple, cranberries, and lemon curd. Spoon into tart shells.
- In another bowl, combine flour, sugar and cinnamon; cut in butter until mixture resembles fine crumbs. Spoon over apple mixture.
- Place filled tarts on ungreased baking sheet. Bake 15-20 minutes or until golden brown. Cool on wire racks for 5 minutes. Serve warm or at room temperature.
