What You'll Need
- 2 package (.3-ounce) sugar-free lemon gelatin mix
- 2 cup boiling water
- 2 cup finely shredded green cabbage
- 1 cup grated carrot
- 1 cup chopped celery
What to Do
- In a saucepan, combine gelatin with boiling water until it dissolves. Transfer to a large bowl and refrigerate until it thickens, about 45 to 60 minutes.
- Coat a 6-cup ring mold with cooking spray. Carefully fold remaining ingredients into thickened gelatin, and pour mixture into mold.
- Refrigerate until firm, about 4 hours or overnight. Remove gelatin salad from mold onto serving plate.
