What You'll Need
- 1 (16-ounce) container reduced-fat small curd cottage cheese, drained
- 1/4 cup chopped yellow bell pepper
- 1/2 cup chopped fresh tomato, drained
- 2 tablespoon chopped scallions
What to Do
- In a salad bowl, combine all ingredients; toss gently to coat.
Notes
Garnish with chopped parsley. And if you don't have a yellow bell pepper, any color will work well.
