Let the jumbo shrimp be the star of this uncomplicated dish, which also includes fresh basil, Romaine lettuce and thin slices of red onion. The bright clean flavors will leave you feeling satisfied and guilt-free!
What You'll Need
- 12 cooked jumbo shrimp, thawed
- 1/2 red onion, thinly sliced
- 1 (15-ounce) can chickpeas, no salt-added, rinsed and drained
- 4 tablespoon balsamic vinegar
- 2 tablespoon olive oil
- 2 tablespoon fresh basil, slivered
- 1 head romaine lettuce, chopped
What to Do
- In a medium bowl, combine shrimp, red onion, Balsamic vinegar, oil, and basil; mix well. Cover and chill 2 hours, or until well chilled.
- Evenly divide lettuce among 4 plates. Top with shrimp mixture and garnish with tomato wedges. Serve immediately.
