What You'll Need
- 2 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 small onion, minced
- 1 tablespoon crushed red pepper*
- 1/4 teaspoon salt
- 1 (1-pound) beef flank steak
- 1 head romaine lettuce, cut into bite-sized pieces
- 6 plum tomatoes, sliced into wedges
- 2 tablespoon sliced olives
- 1/4 cup (1 ounce) crumbled reduced-fat feta cheese
What to Do
-
In a large resealable plastic bag, combine the oil, lime juice, onion, crushed red pepper, and salt; mix well. Add the steak then seal, and turn to coat. Marinate in the refrigerator for at least 4 hours, turning occasionally.
-
Drain the steak, discarding the marinade.
-
Coat a medium skillet with nonstick cooking spray.* Heat the skillet over high heat, add the steak, and cook for 4 to 5 minutes per side for medium-rare, or to desired doneness. Slice the steak thinly across the grain.
-
Place the lettuce on a serving platter and arrange the steak slices and tomato wedges over it. Sprinkle with olives and feta cheese. Serve immediately.

Notes
- To save time, marinate the steak the night before. Then, whe you're ready, cook the meat and prepare the salad. Squeeze it with a fresh lime or top with low-fat dressing.
