Cilantro Shrimp Salad

Did you know that, according to folklore, cilantro was hailed by Greek and Roman doctors for its medicinal powers? It's actually been around so long, that it's believed to be one of the earliest plantings in North America. So bring a little bit of history to your dinner table with our Cilantro Shrimp Salad!
What You'll Need
- 1/2 pound cooked large salad shrimp, peeled and deveined
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cucumber, chopped
- 1 cup frozen corn, thawed
- 1/2 red bell pepper, chopped
- 1/3 cup chopped fresh cilantro
- 1/2 cup canola oil
- 1 tablespoon fresh lime juice
- 1 tablespoon white vinegar
- 1 teaspoon sugar
- 1/2 teaspoon crushed red pepper*
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- In a large bowl, combine the shrimp, black beans, cucumber, corn, bell pepper, and cilantro; mix well, and set aside.
- In a medium bowl, combine the remaining ingredients; mix well, and pour over the shrimp mixture, tossing until well coated. Cover and chill for at least 1 hour before serving.
