Cauliflower Salad

They won't believe that this amazingly delicious deli salad is actually made with cauliflower! In fact, this Cauliflower Salad sort of tastes like a faux, loaded potato salad. Make this anytime you've got a group of folks to impress!
What You'll Need
- 1 head cauliflower, cut into florets
- 1/4 cup low-fat plain yogurt
- 1/4 cup fat-free mayonnaise
- 2 teaspoon yellow mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas, thawed
- 1 cup sliced celery
- 1/4 cup chopped onion
- 1/4 cup reduced-fat shredded Cheddar cheese
- 2 tablespoon bacon bits
What to Do
- In a large pot of boiling water, cook cauliflower 8 to 10 minutes, or until fork-tender. Drain and let cool.
- In a large bowl, whisk yogurt, mayonnaise, mustard, salt, and pepper. Add cauliflower and remaining ingredients to dressing; mix well. Cover and refrigerate until ready to serve.
