California Shrimp Salad

This simple, healthy California Shrimp Salad is a super light main dish for lunch or dinner. The buttery avocado wedges taste decadent, but as we know… they're packed with the "good fats" so we can enjoy them without guilt.
What You'll Need
- 1 head romaine lettuce
- 1 ripe avocado
- 1/2 pound cooked, peeled, deveined shrimp
- Lemon wedges for garnish
What to Do
- Cut out large lettuce ribs or stems with knife. Roll lettuce and hold while cutting in 1/4-inch pieces. Pile lettuce on 4 salad plates, distributing evenly.
- Halve avocado and remove seed. With peel still on, cut each half into 4 wedges. Carefully pull peel away with fingers. Arrange wedges on lettuce.
- Arrange shrimp on top of avocado. Serve with lemon wedges.
