Asparagus and Tomato Salad

What You'll Need
- 2 (10-ounce) packages frozen asparagus spears, thawed and cut in half (see Note)
- 4 large plum tomatoes, cut into 1-inch chunks (1 pound)
- 1/2 medium red onion, cut into strips
- 2 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1/4 cup chopped fresh basil
- 3/4 teaspoon salt
What to Do
- In a large bowl, combine the asparagus, tomatoes, and onion; toss gently.
- In a small bowl, whisk together the remaining ingredients. Pour over the asparagus mixture and toss until coated.
- Cover and chill for at least 1 hour before serving.
Notes
- If you'd prefer to use fresh asparagus, simply blanch them in a large pot of boiling water for 2 minutes then cool and cut.
