Lighter Ambrosia

Our Lighter Ambrosia can still be classified as the "nectar of the Gods," minus the guilt! The sweet, creamy and fruity flavors are practically unbeatable. We've made a classic even better.

What You'll Need

  • 1 (11-ounce) can mandarin oranges, in their own juice, rinsed and drained
  • 1 (8-ounce) can pineapple chunks, in their own juice, drained
  • 2 tablespoon flaked coconut
  • 1/4 cup miniature marshmallows
  • 3/4 cup plain fat-free yogurt
  • 2 packet Spenda
  • 1 teaspoon coconut extract

What to Do

  1. In a medium bowl, combine orange sections, pineapple chunks, coconut, and marshmallows.
  2. In a small bowl, combine yogurt, sugar substitute, and coconut extract. Add to orange mixture. Mix gently to combine.
  3. Cover and refrigerate at least 2 hours before serving.
