Harvest Apples

Spiced apples are a fall favorite, and with our lightened up recipe for Harvest Apples, you can enjoy this classic recipe too. Plus, there's an added bonus of a sweet-smelling house as soon as the apples start cooking!
What You'll Need
- 1 cup no-sugar-added cranberry juice
- 1/4 cup water
- 1/2 cup orange juice
- 1/4 cup sugar substitute (see Note)
- 1 tablespoon lemon juice
- 1 cinnamon stick
- 4 whole cloves
- 3 Granny Smith apples, peeled, cored, and cut in 1/2
What to Do
- In a soup pot, combine the cranberry juice, water, sugar, lemon juice, cinnamon stick, and cloves. Bring the mixture to a boil over high heat. Add the apples and return the liquid to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the apples are tender, turning occasionally. Transfer the apples to a serving dish.
- Boil the remaining liquid, uncovered, for 10 minutes, or until reduced by about one-third. Pour the syrup over the apples. Use the cinnamon stick and cloves as garnish, or discard them.
- Allow the apples to cool for about 20 minutes and serve warm, or cover and chill until ready to serve, turning the apples occasionally to coat with the syrup.
Note
We tested this recipe using stevia, but you can use any sugar substitute you prefer.
