Southwest Chicken Salad

Fresh sweet corn, black beans, tomatoes, and Cheddar cheese add tons of color and flavor to our Southwest Chicken Salad. This healthy salad is a potluck favorite, so you may want to double up on this easy recipe!
What You'll Need
- 4 cup mixed baby greens
- 1/2 cup cherry tomatoes, halved
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup sweet corn
- 1/2 cup diced red onion
- 1/4 cup finely shredded reduced-fat Cheddar cheese
- 2 boneless, skinless chicken cutlets, cooked and sliced
What to Do
- Evenly divide baby greens on 4 plates. Layer with remaining salad ingredients.
Notes
