Southwest Chicken Salad

Fresh sweet corn, black beans, tomatoes, and Cheddar cheese add tons of color and flavor to our Southwest Chicken Salad. This healthy salad is a potluck favorite, so you may want to double up on this easy recipe!

What You'll Need

  • 4 cup mixed baby greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup sweet corn
  • 1/2 cup diced red onion
  • 1/4 cup finely shredded reduced-fat Cheddar cheese
  • 2 boneless, skinless chicken cutlets, cooked and sliced

What to Do

  1. Evenly divide baby greens on 4 plates. Layer with remaining salad ingredients.

Notes

Our low carb Fresh Avocado Dressing adds an extra touch of Southwestern flavor to this salad, and really takes it over the top!
