Cod au Gratin

Next Father's Day, instead of grilling, break with tradition and really give Dad the day off. Sit him down to this fancy-tasting Cod au Gratin.
What You'll Need
- 1 pound mushrooms, chopped
- 1 onion, chopped
- 1/2 cup fresh chopped parsley
- 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 6 cod fillets (about 2 pounds total)
- 3/4 cup dry white wine
- 3/4 cup plain bread crumbs
- 2 tablespoon butter, melted
- 1 cup (4-ounce) shredded Swiss cheese
What to Do
- Preheat the oven to 450 degrees. Coat a 9- x 13-inch baking dish with cooking spray.
- In a medium bowl, combine the mushrooms, onion, parsley, 1/4 teaspoon salt, and 1/4 teaspoon pepper; mix well. Spoon into the baking dish. Place the cod fillets over the mushroom mixture and pour the wine over them.
- In a medium bowl, combine the remaining ingredients, including the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper; mix well. Sprinkle over the fish and bake for 15 to 20 minutes, or until the fish is golden and flakes easily with a fork. Serve immediately.
Notes
Note: If Dad doesn't like Swiss cheese, that's no problem - substitute his favorite variety such as Cheddar, provolone, or Monterey Jack.
