When the holidays come it can be difficult to find recipes that are diabetes-friendly, but give you the same great flavors of the season. Well, we've got a Gingerbread Cookies recipe that's diabetes-friendly, and packed full of cheer! So gather 'round the fire with friends and family, grab a gingerbread cookie, and celebrate in flavorful style!
What You'll Need
- 1 stick (1/2 cup) margarine, softened
- 2 tablespoon brown sugar blend
- 1/4 cup molasses
- 1 egg
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 cup sugar-free vanilla frosting
What to Do
- In a medium bowl, beat together margarine, brown sugar blend, molasses, and egg until creamy.
- In another medium bowl, combine flour, baking soda, ginger, and cinnamon. Gradually add to margarine mixture; mix until smooth. Refrigerate dough for 1 hour or overnight.
- Preheat oven to 375 degrees F. Coat baking sheets with nonstick cooking spray. Roll out dough onto a lightly floured surface to 1/4-inch thickness. Using a 3-inch gingerbread man cookie cutter, cut dough and place on baking sheets.
- Bake 7 to 8 minutes or until golden around edges. Remove to a wire rack to cool completely.
- Decorate cookies with frosting and serve or store in airtight container.
