Flourless Apple Pie Cookies

You don't have to bake up a whole pie to enjoy the taste of classic apple pie! With our recipe for Flourless Apple Pie Cookies you can easily enjoy that fall-favorite taste anytime, while still sticking to your diabetes diet!
What You'll Need
- 1/2 cup roasted almond butter
- 2 tablespoon brown sugar
- 2 tablespoon honey
- 1 large egg
- 1 cup oat flour (See Note)
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/2 cup grated apple
- 1/4 cup chopped walnuts (optional)
What to Do
- Preheat oven to 350 degrees F. Coat 2 baking sheets with cooking spray.
- In a large bowl, beat almond butter, brown sugar, honey, and egg until smooth. Add oat flour, baking soda, cinnamon, and salt; mix until combined. Stir in apple and walnuts. Place heaping teaspoonfuls of batter onto baking sheets.
- Bake 8 to 10 minutes, or until firm to the touch. Let cool 5 minutes, then remove to a wire rack to cool completely.
Notes
- To make oat flour, place old-fashioned or quick oats in a food processor or blender and pulse until it reaches a flour consistency.
- Sprinkle cookies with confectioners' sugar for an extra special treat.
