White Chicken Chili

Our White Chicken Chili recipe uses lean chicken breast, which makes a lighter meal than your typical beef chili, so it tops our list of diabetes-friendly favorites. We know you'll agree as soon as you try it!

What You'll Need

  • 1 onion, chopped
  • 1 tablespoon canola oil
  • 1 (4-ounce) can chopped green chilies, undrained
  • 4 cloves garlic, minced
  • 2 teaspoon ground cumin
  • 1 1/2 teaspoon dried oregano
  • 3 cup low sodium fat free chicken broth
  • 3 cup chopped cooked chicken breast
  • 2 (15-ounce) cans Great Northern beans, rinsed and drained
  • reduced-fat shredded Cheddar cheese (for topping)

What to Do

  1. In a Dutch oven, cook onions in oil over medium-high heat, 5 to 6 minutes, stirring constantly, until tender.
     
  2. Add the remaining ingredients. Bring to a boil, then reduce heat and simmer, uncovered, 25 minutes, or until slightly thickened, stirring often. 

        


 

Notes

  • To serve, ladle chili into individual soup bowls. Top evenly with reduced-fat cheddar cheese and serve immediately.
