White Chicken Chili

What You'll Need
- 1 onion, chopped
- 1 tablespoon canola oil
- 1 (4-ounce) can chopped green chilies, undrained
- 4 cloves garlic, minced
- 2 teaspoon ground cumin
- 1 1/2 teaspoon dried oregano
- 3 cup low sodium fat free chicken broth
- 3 cup chopped cooked chicken breast
- 2 (15-ounce) cans Great Northern beans, rinsed and drained
- reduced-fat shredded Cheddar cheese (for topping)
What to Do

In a Dutch oven, cook onions in oil over medium-high heat, 5 to 6 minutes, stirring constantly, until tender.
- Add the remaining ingredients. Bring to a boil, then reduce heat and simmer, uncovered, 25 minutes, or until slightly thickened, stirring often.
Notes
- To serve, ladle chili into individual soup bowls. Top evenly with reduced-fat cheddar cheese and serve immediately.
