What You'll Need
- 1 green bell pepper, chopped
- 1 onion, finely chopped
- 1 pound lean ground beef
- 1 (14-ounce) can mild diced tomatoes and green chilies
- 1 (1-ounce) packet reduced-sodium taco seasoning mix
- 1 1/2 cup water
- cilantro, chopped (for garnish)
- jalapeno pepper, sliced (for garnish)

Coat a large skillet with cooking spray. Cook onion and peppers 5 minutes until tender, stirring occasionally. Remove and set aside.

In same skillet, cook ground beef over medium heat until browned, stirring occasionally; drain.

Return onion and peppers to skillet. Stir in remaining ingredients, bring to a boil, then reduce heat to low and simmer 20 to 25 minutes, or until heated through. Garnish with chopped cilantro and sliced jalapeno peppers.
