- 1 1/4 pound carrots, sliced
- 1/2 cup light mayonnaise
- 1/4 cup finely chopped onion
- 1 teaspoon prepared horseradish
- 1/4 cup reduced fat shredded cheddar cheese
- 1 tablespoon whole wheat bread crumbs
What to Do
- Preheat oven to 350 degrees F. Coat a 1-1/2-quart baking dish with cooking spray.
- Place carrots in a medium saucepan with enough water to cover. Bring to a boil over high heat. Reduce heat to low and simmer 7 to 9 minutes, or until crisp-tender. Drain and place carrots in baking dish.
- In a small bowl, combine mayonnaise, onion, and horseradish; mix well. Spread mixture evenly over carrots. Sprinkle with cheese, then top with bread crumbs.
- Bake uncovered 25 to 30 minutes, or until golden.
