We ditched the flour to bring you this Flourless Applesauce Cake recipe that's a healthier choice for anyone following a diabetic diet. Not only is this cake better for you nutrition-wise, but the applesauce makes it super moist and the spices make it extra-flavorful. It's a winner all around!

What You'll Need

  • 1 1/2 cup quick-cooking oats
  • 1/2 cup light brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/4 cup canola oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts
  • confectioners' sugar (optional)

What to Do

  1. Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.
  2. Place the oats in a blender or food processor and blend until they resemble flour; place in a medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well.
  3. In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish.
  4. Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then sprinkle with confectioners' sugar if desired.
