Apple-Harvest Spice Cake

This spice cake isn't just your normal spice cake; our Apple-Harvest Spice Cake takes the apple spice cake you know and love to a whole new level! With this diabetic-friendly recipe, you end up with a moist and flavorful apple cake that you're going to love! The little chunks of apple give it that little extra something, to make this a harvest time treat you'll crave all year long.
What You'll Need
- 1 1/2 cup white whole-wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 egg, lightly beaten
- 3/4 cup low-fat plain yogurt
- 1/3 cup brown sugar blend
- 1/4 cup unsweetened applesauce
- 3 tablespoon canola oil
- 1 large apple, peeled and finely chopped
What to Do
- Preheat oven to 350 degrees F. Coat an 8- x 8-inch baking dish with cooking spray.
- In a large bowl, combine flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt; mix well.
- In a medium bowl, combine egg, yogurt, brown sugar blend, applesauce, and oil; mix well.
- Add egg mixture to flour mixture; stir until just combined. Fold in apple. Spread batter evenly in prepared baking dish.
- Bake 25 to 30 minutes or until a toothbpick inserted in center comes out clean. Serve warm or let cool, then serve.
