Caramel Espresso Brownies

To give your Caramel Espresso Brownies a fancy flair, serve each one with a sprinkle of confectioners' sugar and a sprig of fresh mint. Even though you may not be able to taste the espresso, it gives the brownies a full and luxurious flavor!
What You'll Need
- 1 tablespoon instant coffee granules
- 2 tablespoon water
- 2/3 cup all-purpose flour*
- 2/3 cup sugar
- 1/2 cup unsweetened cocoa
- 1/4 cup (1/2 stick) light butter, melted
- 1/3 cup egg substitute
- 1 teaspoon vanilla extract*
- 1/2 teaspoon baking powder
- 1/4 cup caramel sauce*
What to Do
- Preheat the oven to 350 degrees. Coat an 8-inch square baking dish with cooking spray.*
- In a large bowl, dissolve the coffee granules in the water. Add the remaining ingredients except the caramel sauce; mix well. Pour the batter into the baking dish. Drizzle with caramel sauce and, using a knife, swirl the sauce into the batter.
- Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely. Cut into squares and serve, or store in an airtight container until ready to serve.
Notes
*To make this a gluten-free recipe, substitute 2 tablespoons less than 2/3 cup brown rice flour; gluten-free extract and caramel sauce; and nonstick cooking spray with no flour added.
