Recreate the fancy-schmancy taste of restaurant-style popovers with our recipe for Yorkshire Pudding Popovers. Don't expect these to sit too long in your bread basket, 'cause once they get a taste of how light and airy these muffins are...they'll make 'em disappear!
What You'll Need
- 2 eggs, well chilled
- 1 cup cold low-fat (1 percent) milk
- 1 tablespoon butter, melted
- 1 cup all-purpose flour
- 2 scallions, thinly sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
What to Do
- Preheat the oven to 425 degrees. Coat a 6-cup muffin tin with cooking spray.
- In a large bowl, combine all the ingredients and beat with a wooden spoon until smooth. Immediately pour the batter into the muffin cups.
- Bake for 20 to 25 minutes, or until golden and puffy.
- Cool slightly before removing from the muffin cups. Serve immediately.
