Yorkshire Pudding Popovers

Recreate the fancy-schmancy taste of restaurant-style popovers with our recipe for Yorkshire Pudding Popovers. Don't expect these to sit too long in your bread basket, 'cause once they get a taste of how light and airy these muffins are...they'll make 'em disappear!

What You'll Need

  • 2 eggs, well chilled
  • 1 cup cold low-fat (1 percent) milk
  • 1 tablespoon butter, melted
  • 1 cup all-purpose flour
  • 2 scallions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

What to Do

  1. Preheat the oven to 425 degrees. Coat a 6-cup muffin tin with cooking spray.
     
  2. In a large bowl, combine all the ingredients and beat with a wooden spoon until smooth. Immediately pour the batter into the muffin cups.
     
  3. Bake for 20 to 25 minutes, or until golden and puffy.
     
  4. Cool slightly before removing from the muffin cups. Serve immediately.
