Banana Coconut Bread

What You'll Need
- 1 1/4 cup whole wheat flour
- 1/2 cup unsweetened shredded coconut
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed banana
- 1/4 cup canola oil
- 2 tablespoon honey
What to Do
- Preheat oven to 350 degrees F. Coat an 8- x 4-inch loaf pan with cooking spray.
- In a large bowl, mix together flour, coconut, baking powder, baking soda, and salt. In a small bowl, combine banana, oil, and honey; stir gently into flour mixture until well combined. Spread batter into prepared pan.
- Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes in pan, then invert onto wire rack to cool completely.
