What You'll Need
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 two-pound beef flank steak, about 1 inch thick
What to Do
- In a large resealable plastic storage bag, combine all the ingredients except the steak; mix well. Score the steak on both sides by making shallow diagonal cuts 1-1/2 inches apart. Place the steak in the storage bag, seal, and marinate in the refrigerator for at least 4 hours, or overnight, turning the bag over occasionally.
- Heat a large grill pan over high heat until hot. Remove the steak from the marinade and place in the pan; discard the marinade. Cook the steak for 4 to 5 minutes per side for medium-rare, or until desired doneness beyond that.
- Thinly slice the steak across the grain and serve.
