Hungarian Beef Goulash

What You'll Need
- 1 tablespoon all-purpose flour
- 1 tablespoon paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 pound lean top round beef, fat trimmed and cut into 1/2-inch chunks
- 1 tablespoon canola oil
- 1 cup chopped onion
- 3 clove garlic, minced
- 1 (14-1/2-ounce) can no-salt-added diced tomatoes, undrained
- 2 carrots, peeled and cut into 1/2-inch slices
- 1 (14-1/2-ounce) can reduced sodium, fat-free beef broth
- 1 cup fat-free sour cream
What to Do
- In a large bowl, combine flour, paprika, thyme, salt, and pepper; mix well. Add beef chunks, tossing until evenly coated.
- In a soup pot over high heat, heat oil; add beef, onion, and garlic and cook 5 to 7 minutes, or until browned. Add tomatoes, carrots, and beef broth; bring to a boil. Cover, reduce heat to low, and simmer 1-1/4 to 1-1/2 hours, or until beef is tender.
- Stir in sour cream, simmer 2 to 3 minutes, then serve.
Notes
Serve over whole grain egg noodles or brown wild rice.
