Decadent layer bars get a diabetic-friendly makeover in our recipe for Seven Layer Bars. Each layer of this yummy diabetic dessert recipe is loaded with goodness. We're talking the chocolatey-nutty-gooey kind of goodness!
What You'll Need
- 1/2 cup (1 stick) margarine, melted
- 1 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 3/4 cup + 2 tablespoons chopped walnuts, divided
- 1 1/4 cup sugar-free chocolate chips, divided
- 1/3 cup skim milk
- 1/2 cup sugar-free caramel sauce
- 1/4 cup shredded coconut
What to Do
- Preheat oven to 350 degrees F. Coat an 8- x 8-inch baking dish with cooking spray.
- In a medium bowl, combine margarine, flour, cinnamon, and 1/2 cup walnuts; mix well. Press dough into baking dish. Bake 10 minutes, or until a firm crust forms; let cool.
- In a medium bowl, place 1 cup chocolate chips. In a small saucepan over medium heat, heat milk until hot. Pour over chocolate chips and mix until smooth. Place in refrigerator for 10 minutes to thicken. Spread chocolate over crust.
- Sprinkle 1/4 cup walnuts over chocolate, then drizzle with caramel sauce. Sprinkle remaining chocolate chips, coconut, and 2 tablespoons of walnuts on top. Refrigerate 4 hours, or until set. Cut into bars.
