Turkey Enchilada Bites

This easy south-of-the-border favorite is a super last minute meal that's packed with flavor. The filling for our delicious Turkey Enchilada Bites uses light ingredients, and is sure to be a family favorite whether or not you're following a diabetic diet.
What You'll Need
- 1/2 pound ground turkey breast
- 3/4 cup mild red enchilada sauce
- 1/2 cup black beans, rinsed and drained
- 1/2 teaspoon cumin
- 1 tablespoon chopped fresh cilantro
- 6 (6-inch) low-carb whole wheat tortillas
- Cooking spray
- 1 cup reduced-fat finely shredded Cheddar cheese
What to Do

Preheat oven to 375 degrees F. Coat a baking sheet with cooking spray.

In a medium nonstick skillet over medium heat, cook turkey 8 to 10 minutes. Add enchilada sauce, black beans, cumin, and cilantro and simmer about 5 minutes over low heat.

Spray both sides of each tortilla with cooking spray. Spread 2 tablespoons turkey mixture on each close to edge. Top each with 4 teaspoons cheese. Roll tightly and secure with toothpick. Arrange filled tortillas on prepared baking sheet.

Bake about 8 to 10 minutes, or until cheese melts. Cut each tortilla into quarters, securing with toothpicks.
