What You'll Need
- 3 zucchini, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 2 clove garlic, peeled
What to Do
- Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil; coat with cooking spray.
- Spread vegetables on prepared baking sheet.
- Bake 15 minutes and stir. Coat vegetables with cooking spray and bake additional 15 minutes, or until vegetables are tender.
- Transfer to blender or food processor; process 30 to 60 seconds, or until smooth. Serve warm or cold.
