We stuffed hard-boiled eggs with a flavorful hummus mixture to come up with this protein-packed recipe for Hummus Deviled Eggs. Serve these deviled eggs when you're craving a filling snack or just need a change of pace from ordinary deviled eggs.
What You'll Need
- 6 hard-boiled eggs, peeled and cut in half lengthwise
- 1/4 cup hummus
- 2 tablespoon light mayonnaise
- 1 tablespoon roasted red pepper, chopped
- 1/8 tablespoon salt
- 1/8 teaspoon black pepper
What to Do
- In a medium bowl, mash the egg yolks. Add the remaining ingredients and mix well.
- Fill egg white halves with hummus mixture and place on platter. Cover and refrigerate until ready to serve.
