What You'll Need
- 1 pound white mushrooms, washed and halved
- 1 small onion, cut in half and thinly sliced
- 1/4 cup white vinegar
- 1/4 cup canola oil
- 1 tablespoon sugar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- Place the mushrooms in a medium saucepan and cover with water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 3 minutes; drain and let cool.
- In a glass container with a tight-fitting lid, combine onion, vinegar, canola oil, sugar, oregano, salt and pepper; mix well. Add the cooked mushrooms, stir, cover, and chill for at least 2 hours before serving.
