Easy Cucumber Cups

It's hot outside and everyone is coming over to cool off. Instead of serving up the same old vegetable appetizers, whip up these hot-weather-perfect Easy Cucumber Cups! Not only are they overflowing with a creamy filling, but did you know that cucumbers can help to keep you hydrated? They are packed full of water! It's a cool, refreshing, and filling appetizer you won't be able to resist!
What You'll Need
- 2 large cucumbers, cut into 1-inch slices
- 1 cup cubed cooked ham
- 3 hard-boiled eggs
- 1/2 cup fat-free plain yogurt
- 1/4 cup light mayonnaise
- 2 tablespoon Dijon mustard
- 1/4 cup dill pickle relish, drained
- 1/2 cup chopped scallion (with 1 tablespoon reserved for garnish)
- 1/4 teaspoon black pepper
What to Do
- Partially scoop out the center of the cucumber slices, making sure to leave the bottom of each slice intact.
- Place ham and eggs in a food processor and process until finely chopped; place in a medium bowl.
- Place remaining ingredients in food processor and pulse until smooth. Add to ham and egg mixture and mix until well combined.
- Fill cucumber cups with ham mixture and top with reserved scallions. Serve immediately or refrigerate until ready to serve.
