Many Italian restaurants include bruschetta on their appetizer menus, 'cause it's fresh, tasty, and a great way to start a meal. Our recipe for Bistro Bruschetta is just as good as any restaurant-kind and looks pretty too!
What You'll Need
- 1/4 cup olive oil, divided
- 1 teaspoon garlic powder
- 1 loaf (16 ounces) French bread, cut into 1-inch slices
- 8 plum tomatoes, seeded and chopped
- 1/4 cup chopped fresh basil
- 1/2 cup finely chopped red onion
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- Preheat the oven to 400 degree F.
- In a medium bowl, combine the oil and garlic powder; mix well and set aside 2 tablespoons of the mixture.
- Brush the tops of the bread slices with the remaining oil mixture and place on a baking sheet. Bake for 8 to 10 minutes, or until golden.
- Meanwhile, in the same large bowl, combine the remaining ingredients with the reserved oil mixture. Spoon the tomato-onion mixture over the toasted bread slices and serve.
