Ham and Rice Skillet

Forget all your other boring weeknight meals. Our Ham and Rice Skillet recipe is not only easy, but it's also a fun change of pace from the same ol' meals that grace the dinner table during the week. The delicious seasoning blend is what really takes this ham and rice recipe over the top. Your taste-buds will cheer with joy from the savory and bold flavors that bring a little excitement to the week.
What You'll Need
- 2 cups frozen seasoning blend (celery, onion, peppers, parsley)
- 5 slices 98% fat-free deli ham, diced
- 2 cups cooked brown rice
- 1/2 cup liquid egg substitute
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 small scallion, sliced
What to Do
- In a nonstick skillet over medium heat, combine 2 tablespoons water and frozen seasoning blend. Cook for 3 to 4 minutes or until vegetables are tender and liquid evaporates, stirring occasionally.
- Spray vegetables and skillet with cooking spray. Add ham and cook 1 to 2 minutes. Stir in rice and mix well. Pour in egg substitute and continue to cook until it sets, stirring occasionally.
- Sprinkle with scallions and serve.

This reminds me of those boxed Banquet meals that had everything in the box. I'm not sure if they still carry this kind , even though it was good. I like that this recipe is diabetic friendly, as my mother is a diabetic. It has gotten a lot easier to find recipes for diabetics, than it used to be, thankfully.
