Remember when they used to say "Eat Your Colors!" in school? Our School House Salad is a layered salad that's bursting with fun and flavorful colors! It's one that works for just about any occasion and everyone is sure to love!

What You'll Need

  • 1 head iceberg lettuce, shredded
  • 1 cup shredded carrots
  • 1 cup sliced celery
  • 1 cup cherry tomatoes
  • 1 cup frozen green peas, thawed
  • 3/4 cup reduced-fat ranch dressing

What to Do

  1. In a large salad bowl, layer lettuce, carrots, celery, tomatoes, and peas.
  2. Seal top of salad and chill until ready to serve. When ready to serve, remove seal and pour ranch over top of salad. 

Notes

  • While this can be a make-ahead meal, we recommend serving it same day as opposed to letting it sit overnight, otherwise it may get soggy.

Would canned peas work?

Hello! Yes, canned peas can be substituted for frozen peas; just keep in mind, if serving for a gathering of people, canned peas don't have that pretty green color. :)

As spring is turning quickly into summer, this is going to be a lovely addition to a lighter fare - I'm making this today with the spring greens on hand.

Doesn't the lettuce get soggy overnight? I would think maybe a romaine might be a better choice. How do you serve this when ready to get some of everything without tossing or getting it all over the table? It is beautiful and I would like to make it for a birthday dinner next week.Please answer questions. Thank you

Hi Dolores! So, we took your questions back to the Test Kitchen, and they agreed that the salad might get soggy if doing it overnight, so the recipe has been changed to reflect that this can still be made ahead of time, but preferably for the same day. So, if you make it same day for the birthday dinner, as in you make it in the morning, it should be fine in the evening. Also, romaine is a great choice for this salad as well, but you can use any salad mix you prefer. If you're worried about spilling it, make it in a larger bowl to be on the safe side. It should come out just as yummy!
