What You'll Need
- 1 (15-1/4-ounce) package devil's food chocolate cake mix
- 1 can (12-ounce) diet cola
- 1 1/2 cup fat-free whipped topping, thawed
What to Do

Preheat oven to 350 degrees. Coat a 9- x 13-inch baking dish with cooking spray.

Add cake mix to large bowl. Break up lumps with your fingers. Fold in cola gradually with large spatula just until mix is moistened.

Pour batter into prepared pan and smooth evenly with spatula.

Bake for 30 minutes or until toothpick inserted in center comes out clean. Cool on wire rack.

Spoon 1 tablespoon whipped topping on each serving.

"Diabetes cake recipe?" I think not! You're still using a full sugar cake mix and a full sugar whipped topping. This diabetic will pass, thanks.

I have a concern before I make this. The instructions say to use diet cola, my understanding is that diet colas have equal as the sweetening agent which cannot be heated due to the chemical conversion that occurs with heating. Is there any other liquid which may be used in place of the diet cola? Thank You.

Hey there! The concern about heating some artificial sweeteners is that they will lose their sweetness. Here we are using the diet soda for texture, not sweetness, so its ok. If you'd like, you can chose a diet soda sweetened with Splenda and there are even some diet sodas that are sweetened with Truvia.

I make this will Pillsbury sugar free cake, and put it into cupcakes. The guys at work think these are the best most moist cupcakes they have ever eaten. So yes it works with sugar free cake. I also use sugar free icing from a can. Often I use yellow sugar free cake and use sugar free 7 up or even Orange Diet Sunkist with the yellow cake.

I have only used the sugar free cake mixes for this and it works just fine!

Most sugar-free cake mixes are lower in volume than regular cake mixes, so chances are it would affect the final product. If you end up trying it yourself, let us know how it turns out!
